  3. I’m so glad to find this recipe, I saw gorgeous dandelion greens at the farmer’s market last week and I didn’t buy them because I wasn’t sure how to use them — now I know :)

  5. We’ll take any weather (even rainy weather) after the winter we’ve had. Spring and fall happen to be my favorites… I don’t do well with extreme temperatures.

    So glad someone else tried dandelion greens. I made a salad a few months ago and was surprised by how much I enjoyed them. Just needs to be dressed properly to cut the intense bitterness. Love everything that’s going on with your dish… especially the beets. Bet it adds a nice earthiness.
