Delicious doesn’t have to be difficult. In fact, we are enjoying the absolute peak of easy eats, when home cooks everywhere nearly abandon their stoves. Along those lines, I am happy to present this incredibly simple ricotta pudding. With just three main ingredients, it can be put together in about 20 seconds yet has surprisingly robust flavor. I based my recipe on one found in The New York Times. Kahlua, honey, and blackberries meld wonderfully into the creamy ricotta.
